- 1.5 lbs boneless, skinless chicken thighs
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 cup low-sodium chicken broth
- 2 tablespoons fresh lemon juice
- 1/2 cup Kalamata olives, pitted and halved
- 1/2 cup feta cheese, crumbled
- 1/2 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh parsley, chopped (for garnish)
- Salt and black pepper to taste
Instructions
- Pat chicken thighs dry with paper towels and season generously with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken thighs for 3-4 minutes per side until golden brown and cooked through (165°F). Remove chicken and set aside.
- Reduce heat to medium. Add minced garlic and dried oregano to the skillet; stir for 30 seconds until fragrant.
- Pour in chicken broth and lemon juice, scraping up brown bits from the bottom of the pan.
- Simmer sauce for 2-3 minutes until slightly thickened. Add olives and stir to heat through.
- Return chicken to the skillet, nestling it into the sauce. Spoon sauce over the chicken.
- Sprinkle crumbled feta cheese evenly over the chicken and olives.
- Turn off heat, cover with a lid, and let sit for 1-2 minutes to allow feta to melt into a creamy sauce.
- Garnish with fresh parsley and red pepper flakes if desired. Serve immediately with couscous, rice, or crusty bread.
Notes
Chicken thighs are preferred over breasts for juiciness. Do not boil the sauce after adding feta to prevent separation; use residual heat to melt the cheese. This dish does not freeze well due to the dairy. Rinse olives if you are watching sodium intake.
