  • 1 tablespoon (15g) baking powder
  • 1 teaspoon (6g) salt
  • ½ cup (115g) unsalted butter, cold and cubed
  • ¾ cup (180ml) buttermilk
  • ¼ cup (60g) melted butter (for topping)
  • Honey or jam (optional, for serving)

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, and salt for one minute to ensure even distribution.
  3. Add the cold, cubed butter to the flour mixture. Use a fork, pastry cutter, or fingers to work the butter into the flour until the mixture resembles coarse crumbs with pea-sized chunks of butter remaining.
  4. Pour in the buttermilk. Gently mix with a fork or spatula just until the dough comes together and there are no dry spots. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Pat it out to about ¾-inch thickness. Cut out rounds using a 2-inch biscuit cutter or glass, pressing straight down without twisting.
  6. Place biscuits on the prepared baking sheet, leaving about an inch between them. For taller biscuits, stack two rounds on top of each other.
  7. Bake for 12-15 minutes, or until golden brown on top. Cover loosely with foil if browning too quickly.
  8. While baking, melt the topping butter. As soon as biscuits come out of the oven, brush them generously with the melted butter.
  9. Serve warm.

Notes

Keep all ingredients cold for flaky layers. Do not overmix the dough to avoid tough biscuits. If you don’t have buttermilk, substitute with milk plus 1 tablespoon of vinegar or lemon juice per cup, let sit for 5 minutes. Biscuits can be frozen raw and baked from frozen, adding 2-3 minutes to bake time. Do not refrigerate baked biscuits as they will stale faster.
