  • 1 teaspoon vanilla extract
  • 1/2 teaspoon sea salt
  • 1 cup (100g) raw almonds, toasted and crushed
  • Optional: 1/2 cup toasted coconut flakes
  • Optional: Extra sea salt for sprinkling

Instructions

  1. Toast the almonds in a dry skillet over medium heat for 3-5 minutes until fragrant and lightly browned. Let cool, then roughly chop or pulse in a food processor until small pieces remain.
  2. Pour the full-fat coconut milk into a small saucepan with a thick bottom. Heat over medium-low heat until it reaches a gentle simmer (about 3 minutes).
  3. Remove the saucepan from the heat. Add the chocolate chips and vanilla extract. Let sit for 1 minute, then stir gently until the mixture is completely smooth and glossy.
  4. Stir in the 1/2 teaspoon of sea salt.
  5. Pour the mixture into a medium bowl. Cover with plastic wrap, pressing it directly onto the surface to prevent a skin from forming.
  6. Refrigerate for at least 2 hours, or overnight, until the mixture is firm enough to scoop.
  7. Line a baking sheet with parchment paper. Scoop small portions (about 1 teaspoon) of the chilled mixture and roll into balls between your palms.
  8. Roll each ball in the toasted almonds, pressing gently to coat. If the mixture is too sticky, chill hands in cold water or dust with cocoa powder.
  9. Place the rolled truffles back on the parchment-lined sheet and refrigerate for another 30 minutes to set completely.
  10. Store in an airtight container in the refrigerator for up to 2 weeks.

Notes

Use full-fat coconut milk from a can, not light milk or carton beverage, for the correct texture. Toasting the almonds significantly enhances the flavor. Keep hands cool while rolling to prevent the truffles from melting. These truffles are best served cold.
