Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking dish with butter or cooking spray.
  2. In a large mixing bowl, peel and mash the ripe bananas with a fork, leaving some small chunks for texture.
  3. Add the melted butter, eggs, milk, and brown sugar to the mashed bananas. Whisk vigorously until the sugar is mostly dissolved and the mixture is smooth.
  4. Stir in the rolled oats, baking powder, cinnamon, and salt. Fold gently until everything is coated. Fold in nuts or chocolate chips if using.
  5. Pour the batter into the prepared baking dish and smooth the top with a spatula.
