Description
A frothy, cold, and visually stunning summer brunch drink made with whipped heavy cream, milk, and a fresh strawberry puree. It takes less than 5 minutes to make and uses ripe berries for maximum flavor.
Ingredients

- 1 cup (150g) fresh or frozen strawberries
- 1–2 tablespoons (15-30g) sugar or honey
- 1 teaspoon (5ml) lemon juice
- ½ cup (120ml) heavy cream, cold
- 1 cup (240ml) milk, cold
- ½ teaspoon (2.5ml) vanilla extract
- Pinch of salt
- Ice cubes
- Optional: Extra berry puree, mint leaves, or whipped cream for garnish
Instructions
- Prep the strawberries: Hull and rinse fresh strawberries or thaw frozen ones for 10 minutes.
- Make the berry puree: Blend strawberries, sugar (if using), and lemon juice until smooth. Taste and adjust sweetness if needed.
- Whip the cream: In a cold bowl, beat heavy cream, vanilla extract, and salt until soft peaks form.
- Combine the milk: Gently fold the whipped cream into the cold milk until marbled and fluffy.
- Assemble the drink: Fill a tall glass with ice, pour in 2 tablespoons of berry puree, then slowly pour the whipped milk mixture over the ice to create swirls.
- Garnish and serve: Drizzle with extra puree, add mint, and serve immediately.
Notes
Keep all ingredients cold for best whipping results. Do not over-whip the cream or it will turn to butter. The puree can be made up to 2 days ahead, but the whipped milk should be made fresh. For a dairy-free version, use coconut cream and oat milk.
