Description

Ingredients

  • 2 cups (480ml) Cold Brew Coffee
  • 2 tablespoons (30g) Pumpkin Puree (100% pure, not pie filling)
  • 1–2 tablespoons (15-30ml) Maple Syrup
  • 1 cup (240ml) Oat Milk (or almond milk)
  • 1 can (400ml) Full-Fat Coconut Milk (chilled overnight)
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Pumpkin Pie Spice
  • Pinch of Sea Salt (optional)

Instructions

  1. Whisk together the pumpkin puree, maple syrup, and pumpkin pie spice in a small bowl until completely smooth with no lumps.
  2. Fill a glass with ice and pour in the cold brew coffee until the glass is about 3/4 full.
  3. Add the pumpkin spice mixture to the coffee and stir well until dissolved.
  4. Chill a can of full-fat coconut milk overnight. Scoop out the solid cream that rises to the top into a blender or mixing bowl.
  5. Add the vanilla extract and 1/2 teaspoon of pumpkin pie spice to the coconut cream.
  6. Blend on high speed for 30-60 seconds until the foam is thick, airy, and holds its shape.
  7. Slowly pour the coconut cream foam over the back of a spoon onto the cold brew to create a layered effect.
  8. Garnish with a sprinkle of cinnamon or a drizzle of maple syrup if desired.

Notes

Ensure the coconut milk is chilled overnight for the cream to separate properly. Use 100% pure pumpkin puree, not pumpkin pie filling. The foam should be stiff enough to hold peaks; if too thin, blend longer. If too stiff, add a tiny splash of coconut water. The cold brew base can be stored for up to 5 days, but the foam must be made fresh.
