A quick, 5-minute healthy breakfast shake that tastes like dessert. This vegan, dairy-free recipe combines Medjool dates, almond milk, peanut butter, and cinnamon for a creamy, fiber-rich meal that keeps you full.

- 4–5 large Medjool dates, pitted
- 1 ½ cups unsweetened almond milk
- 2 tablespoons peanut butter
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 1 cup ice cubes
- 2 tablespoons old-fashioned oats (optional)
- Pinch of salt
Instructions
- Prep the dates: If dates have pits, remove them. Slice them in half. If dates are dry or hard, soak them in warm water for 5-10 minutes, then drain.
- Add ingredients to blender: Pour in almond milk, peanut butter, vanilla extract, cinnamon, salt, and oats (if using). Add the dates.
- Add ice: Place ice cubes on top of the mixture to help push ingredients down into the blades.
- Blend: Start on low speed, then gradually increase to high. Blend for 1-2 minutes until completely smooth and creamy. Scrape down sides if needed.
- Taste and adjust: Check sweetness and spice levels. Add another date for sweetness or more cinnamon/salt to taste.
- Serve: Pour into a glass and enjoy immediately while cold and frothy.
Notes
If using dried dates, soak them in warm water for 10-15 minutes before blending to soften. For a thicker shake, add more ice or oats. For a thinner shake, add more milk. This shake is best consumed immediately; if stored, it will thicken and may require stirring with a splash of milk.
