  • 8 oz (225g) Block Cream Cheese, full fat, room temperature
  • 1/2 cup (115g) Unsalted Butter, room temperature (for frosting)
  • 34 cups (360-480g) Powdered Sugar, sifted
  • 1 teaspoon Vanilla Extract (for frosting)
  • 1/4 teaspoon Salt (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and dust with flour or line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt until no lumps remain.
  3. In a separate bowl, beat 1/2 cup butter and granulated sugar until light and fluffy (2-3 minutes). Add eggs one at a time, beating well after each. Stir in 2 teaspoons vanilla extract.
  4. Add the stout beer to the wet mixture and stir to combine. Gradually add dry ingredients to wet ingredients, mixing on low speed until just combined. Do not overmix. Batter will be thin.
  5. Pour batter evenly into prepared pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
  7. While cakes cool, make the frosting: Beat 8 oz cream cheese and 1/2 cup butter until smooth. Add 1 teaspoon vanilla and 1/4 teaspoon salt. Gradually add powdered sugar, beating on low then high speed until fluffy.
  8. Assemble: Place one cake layer on a plate, spread a thick layer of frosting on top. Add second layer. Frost top and sides. Chill before serving if desired.

Ensure all ingredients are at room temperature for best emulsification. Do not overmix the batter to avoid a tough cake. The cake must be completely cool before frosting to prevent melting.
