  • 2 cans (15 oz each) black beans, drained and rinsed
  • 1 large red bell pepper, diced
  • 1 large yellow bell pepper, diced
  • 1 medium red onion, finely diced
  • 12 jalapeños, seeded and minced
  • 1 cup fresh cilantro, chopped
  • 2 ripe avocados, diced
  • ½ cup fresh lime juice (about 45 limes)
  • ½ cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 1 teaspoon ground cumin
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon sea salt (or to taste)
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Dice the red and yellow bell peppers into small, even pieces (about ¼ inch). Finely dice the red onion. If desired, soak the onion in cold water for 10 minutes to mellow the bite, then drain. Mince the jalapeño and chop the cilantro. Set aside.
  2. In a small bowl, whisk together the fresh lime juice, olive oil, apple cider vinegar, cumin, minced garlic, Dijon mustard, sea salt, and black pepper until emulsified. Taste and adjust seasoning if needed.
  3. In a large mixing bowl, combine the drained black beans, diced bell peppers, red onion, and jalapeño. Pour about ¾ of the dressing over the mixture and toss gently to coat. Add remaining dressing if needed.
  4. Cover the bowl and refrigerate for at least 1 hour, ideally overnight, to allow flavors to meld and onions to soften.
  5. Just before serving, dice the avocados and toss them gently into the caviar. Sprinkle with fresh chopped cilantro and give one final gentle toss.
  6. Serve with sturdy thick-cut corn tortilla chips. Garnish with lime wedges and extra cilantro sprigs if desired.

Notes

For best results, let the caviar rest in the fridge for at least 1 hour or overnight to allow flavors to meld. Add avocados only right before serving to prevent browning. If making ahead, store avocados separately and add them just before serving. Use low-sodium beans to control sodium levels. Serve with sturdy restaurant-style corn chips.
