Ingredients
- 1 large loaf stale sourdough bread, sliced into 1-inch thick pieces
- 4 large eggs
- 1 cup whole milk
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1 pinch salt
- 2–3 tablespoons unsalted butter (for frying)
- 1/2 cup pure maple syrup
- 1 tablespoon butter (for syrup)
- 1/2 teaspoon ground cinnamon (for syrup)
- 1 pinch nutmeg (optional)
- 1–2 tablespoons milk or cream (to thin syrup)
Instructions
- If the sourdough bread is not stale, slice it and leave it out on a wire rack for 24 hours to dry out. Slice into 1-inch thick pieces.
- In a wide, shallow bowl, whisk together the eggs, milk, heavy cream, vanilla extract, cinnamon, and salt until smooth.
- Place a large skillet or griddle over medium-low heat and add 1 tablespoon of butter, letting it melt and foam slightly.
- Dip each slice of bread into the egg mixture, soaking for 10-15 seconds on each side. Let excess drip off.
- Place the soaked bread in the hot skillet. Cook for 3-4 minutes on the first side until golden brown and crispy. Flip and cook for another 2-3 minutes on the other side.
- While the toast cooks, combine maple syrup, 1 tablespoon butter, cinnamon, and nutmeg in a small saucepan. Heat over low heat until warm and fragrant. Thin with milk or cream if necessary.
- Serve the hot toast stacked on plates, drizzled generously with the warm maple cinnamon syrup.
Notes
Stale bread is essential for the best texture; fresh bread will become mushy. If you are in a hurry, you can dry fresh bread in a 300°F oven for 10 minutes. Cook on medium-low heat to ensure the inside is cooked through without burning the outside. For a make-ahead option, dip the bread and refrigerate overnight before cooking.
