Soft Oreo Stuffed Cookies

  • Author: Saly
  • Total Time: 45 minutes
  • Yield: 24 cookies 1x

Description

Thick, chewy, and gooey cookies stuffed with a whole Oreo cookie. This easy family recipe yields soft, indulgent treats that are budget-friendly and kid-approved.

Ingredients

Scale
  • 1 cup (226g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) packed brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 ¼ cups (280g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 12 full standard Oreo cookies
  • ½ cup crushed Oreo crumbs
  • 1 cup semi-sweet chocolate chips (optional, for mixing in)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  3. Add eggs one at a time, beating well after each addition, then mix in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt.
  5. Gradually add dry ingredients to the wet mixture and mix until just combined. Do not overmix.
  6. Fold in semi-sweet chocolate chips if using.
  7. Place 4-5 Oreo cookies in a ziplock bag and crush into coarse crumbs using a rolling pin.
  8. Scoop about 2 tablespoons of dough, flatten into a disc, and place one whole Oreo in the center.
  9. Fold dough over the Oreo, sealing edges completely to prevent leaking, and roll into a smooth ball.
  10. Roll the dough ball in crushed Oreo crumbs to coat completely.
  11. Place cookies on prepared baking sheets, leaving 2 inches between each.
  12. Bake for 10-12 minutes until edges are set but centers are still soft.
  13. Let cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure butter is softened, not melted, for chewy texture. Seal dough tightly around Oreos to prevent leaking. Chill dough for 30 minutes if cookies spread too much. Dough balls can be frozen and baked from frozen, adding 1-2 minutes to bake time.
