  • 2 pounds pork country-style ribs
  • 1 large yellow onion, sliced into half-rings
  • 2 tablespoons apple cider vinegar
  • 1/2 cup water
  • 1 cup BBQ sauce
  • 2 tablespoons honey
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • Salt to taste
  • Optional: 1/2 teaspoon liquid smoke

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Slice the yellow onion into thin half-rings and spread them evenly across the bottom of a 9×13 baking dish.
  3. Pour the apple cider vinegar over the onions.
  4. Pat the pork ribs dry with paper towels and season generously with salt and black pepper.
  5. Place the ribs in a single layer on top of the onions.
  6. Pour 1/2 cup of water over the ribs and onions.
  7. Cover the dish tightly with aluminum foil, sealing the edges well to trap steam.
  8. Bake for 30 minutes.
  9. While ribs bake, whisk together BBQ sauce, honey, smoked paprika, and garlic powder in a small bowl.
  10. Remove dish from oven and carefully peel back foil.
  11. Drain most of the liquid from the pan, leaving the onions and a little juice.
  12. Brush the glaze generously over the ribs.
  13. Turn oven to Broil (or High Roast at 450°F).
  14. Broil ribs uncovered for 10-12 minutes, watching closely until sauce bubbles and chars.
  15. Remove from oven and let rest for 5 minutes before slicing and serving.

Notes

Ensure the foil is sealed tightly to trap steam for tender meat. Watch the broiler closely as ovens vary; you want caramelization, not burning. Leftovers can be stored in the fridge for up to 4 days or frozen for 3 months.
