Ingredients

  • 2 oz Bourbon Whiskey
  • 0.75 oz Fresh Lemon Juice
  • 0.5 oz Pure Maple Syrup
  • 1 large Egg White (or 0.75 oz Aquafaba for vegan option)
  • 1 teaspoon Wood Chips (hickory, oak, or applewood)
  • 1 Lemon Twist (for garnish)
  • 2 dashes Angostura Bitters (optional)

Instructions

  1. Prep ingredients: Ensure lemons are at room temperature, squeeze and measure juice, measure maple syrup, and separate egg white or drain aquafaba.
  2. Dry Shake: Add bourbon, lemon juice, maple syrup, and egg white (or aquafaba) to a shaker without ice. Shake hard for 15-20 seconds to emulsify and create foam.
  3. Wet Shake: Add a handful of ice to the shaker. Shake hard again for 15-20 seconds to chill and dilute the drink.
  4. Strain: Strain the mixture into a chilled coupe glass (or rocks glass with ice) to create a thick, frothy head.
  5. Smoke: Use a smoking gun to fill the glass with smoke for 10-15 seconds, or use a torch to smoke a cinnamon stick/orange peel under a dome for 10 seconds before pouring.
  6. Garnish: Express lemon twist oils over the drink, drop it in, and add dashes of Angostura bitters on top of the foam. Serve immediately.

Notes

Use fresh lemon juice for best brightness. If using a torch, trap smoke under a dome for 10 seconds. Serve immediately as the foam is delicate. For parties, pre-mix the base (bourbon, lemon, maple) and shake/smoke individually upon serving.
