Description

A quick, healthy, and flavorful one-pan weeknight dinner featuring roasted Italian sausage and bell peppers topped with a sweet and tangy balsamic glaze.


Ingredients

  • 2 pounds Italian sausage (spicy or mild), sliced into 1-inch rounds
  • 3 large bell peppers (red, yellow, orange), cut into 1-inch chunks
  • 2 medium yellow onions, cut into wedges
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • 1/2 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 4 cloves garlic, minced
  • Optional: 8oz mushrooms or 1 medium zucchini

Instructions

  1. Preheat oven to 400°F (200°C). Line a large 18×13 inch rimmed baking sheet with parchment paper.
  2. In a large bowl, toss bell peppers and onions with olive oil, oregano, salt, and pepper. Spread in a single layer on the prepared sheet pan.
  3. Roast vegetables for 15 minutes until edges begin to brown and soften.
  4. Remove pan from oven. Nestle sausage slices into the vegetables in a single layer.
  5. Return to oven and roast for another 15 minutes, or until sausages reach an internal temperature of 160°F and vegetables are tender.
  6. While sausages roast, combine balsamic vinegar, honey, Dijon mustard, and minced garlic in a small saucepan over medium heat.
  7. Simmer the glaze for 3-4 minutes until it reduces by one-third and becomes syrupy.
  8. Remove sheet pan from oven. Brush or drizzle the warm glaze over the sausages and vegetables.
  9. Return to oven for 2-3 minutes to caramelize the glaze.
  10. Serve immediately, optionally topped with fresh parsley or Parmesan cheese.

Notes

Do not crowd the pan to ensure vegetables roast rather than steam. Use fresh garlic for the best flavor. If using pre-cooked sausages, add them in the last 10 minutes. Leftovers store well in the fridge for up to 4 days; reheat with a splash of water to loosen the glaze.
