- ½ cup strong brewed coffee (120ml)
- ½ cup milk of choice (120ml)
- ¼ cup Greek yogurt (60g)
- 2 tablespoons maple syrup (30ml)
- 1 teaspoon pumpkin pie spice
- ½ teaspoon vanilla extract
- 1 tablespoon chia seeds (optional)
Instructions
- Brew a strong cup of coffee (about ½ cup or 120ml) and let it cool to room temperature.
- In a jar or bowl, combine rolled oats, pumpkin puree, milk, Greek yogurt, and cooled coffee.
- Stir in maple syrup, pumpkin pie spice, vanilla extract, and chia seeds if using until evenly mixed.
- Seal the container tightly and refrigerate overnight (at least 8 hours, minimum 4 hours if in a hurry).
- In the morning, stir the oats and add a splash of milk if too thick. Sweeten with extra maple syrup if desired.
- Top with optional toppings like chopped pecans, cinnamon, or dark chocolate chips and enjoy.
Notes
Use strong coffee for best flavor and chill it before mixing to avoid cooking the oats. Maple syrup balances the flavors well. Prep multiple jars for the week. Adjust thickness by adding more milk or chia seeds. Swap Greek yogurt for coconut yogurt for dairy-free option.
