Description

A quick and indulgent weeknight meal that captures the flavor of a classic Philly cheesesteak without the bread. Sweet bell peppers are stuffed with seared flank steak, caramelized onions, and melted provolone cheese, ready in just 30 minutes.


Ingredients

  • 4 large sweet bell peppers (red or yellow), tops sliced off, seeds and membranes removed
  • 1 tablespoon vegetable oil
  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon freshly cracked black pepper
  • Salt to taste
  • 45 slices provolone cheese (or 1 cup shredded)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare the peppers by slicing off the tops and removing stems, seeds, and membranes. Place them upright in a 9×13 inch baking dish.
  3. Heat vegetable oil in a large skillet over medium-high heat. Add sliced steak and sear without stirring for 60 seconds to create a crust, then cook for 2-3 minutes until just done. Remove beef and set aside.
  4. Reduce heat to medium. Add onions to the same skillet with beef juices and cook for 3-4 minutes until softened and browned.
  5. Add garlic in the last 30 seconds, then stir in Worcestershire sauce and black pepper. Return beef to the pan and toss to combine. Taste and add salt if needed.
  6. Divide the beef and onion mixture evenly among the four peppers, packing it in gently.
  7. Top each pepper generously with provolone cheese.
  8. Bake for 15-18 minutes until peppers are tender-crisp and cheese is bubbly and browned.
  9. Let rest for 5 minutes before serving to allow filling to set.

Notes

Slice steak against the grain for tenderness. Use real block provolone rather than pre-shredded for better melting. Do not overcook peppers or they will become mushy. Letting the dish rest for 5 minutes helps the filling set so it doesn’t spill when cut.
