  • 6 tablespoons (85g) unsalted butter, cold and cubed
  • 1 cup (240ml) whole milk or buttermilk
  • 1 teaspoon (5ml) vanilla extract
  • 1 teaspoon (2g) cinnamon
  • 1 tablespoon (15ml) lemon juice

Instructions

  1. Preheat oven to 375°F (190°C). In a large bowl, toss sliced peaches with granulated sugar, brown sugar, cinnamon, lemon juice, and 2 tablespoons of flour. Let sit while preparing biscuit topping.
  2. In a medium bowl, whisk together remaining flour, baking powder, salt, and sugar. Cut in cold, cubed butter using a pastry cutter or fingers until mixture resembles coarse crumbs.
  3. Stir in milk (or buttermilk) and vanilla extract until just combined. Do not overmix.
  4. Pour peach mixture into a greased 9×13-inch baking dish, spreading evenly.
  5. Drop spoonfuls of biscuit dough over peaches, spacing out but covering most of the fruit.
  6. Bake for 30-35 minutes until biscuit topping is golden brown and peach filling is bubbly. Tent with foil if topping browns too quickly.
  7. Let cobbler cool for 5-10 minutes before serving to allow filling to thicken.
  8. Serve warm, optionally with vanilla ice cream or whipped cream.
