Description
Fudgy, rich, and genuinely decadent Paleo brownies made with sweet potato and almond butter. These gluten-free and dairy-free treats are ready in under 30 minutes and offer a healthy, protein-packed dessert option.
Ingredients
- 1 medium sweet potato (about 1 cup mashed / 200g), roasted or microwaved and cooled
- ½ cup (120g) natural creamy almond butter
- ½ cup (50g) unsweetened cocoa powder
- ⅓ cup (80ml) pure maple syrup
- 1 teaspoon vanilla extract
- 2 large eggs
- ½ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup (80g) dairy-free chocolate chips
- Optional: Sea salt flakes for topping
Instructions
- Preheat oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving an overhang on two sides, and grease lightly.
- Cook the sweet potato until soft (roast at 400°F for 45-60 mins or microwave for 5-7 mins). Let cool, scoop out flesh, and mash or blend until smooth.
- In a blender or food processor, combine sweet potato puree, almond butter, maple syrup, eggs, and vanilla. Blend on high until completely smooth and creamy.
- Pour the wet mixture into a mixing bowl. Add cocoa powder, baking powder, and salt. Stir with a spatula until just combined.
- Fold in the dairy-free chocolate chips, reserving a small handful for topping.
- Pour batter into the prepared pan and spread evenly. Sprinkle with reserved chocolate chips and sea salt flakes.
- Bake for 20-25 minutes until the top looks set and a toothpick inserted comes out with moist crumbs.
- Let brownies cool in the pan on a wire rack for at least 30 minutes to set before lifting out and slicing.
Notes
Do not use canned sweet potato pie filling; use fresh roasted or microwaved sweet potato. Ensure almond butter is smooth and natural. Do not overbake as they dry out quickly. Cool completely before cutting to ensure they set properly. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
