  • 3/4 cup granulated sugar (adjust based on peach sweetness)
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons granulated sugar (for topping)
  • 1/2 cup unsalted butter, cold and cubed
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted (for brushing)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Blanch fresh peaches in boiling water for 30 seconds, then plunge into an ice bath to remove skins. Slice into wedges and remove pits.
  3. In a large bowl, toss sliced peaches with 3/4 cup sugar, lemon juice, cornstarch, cinnamon, and nutmeg. Let sit for 15 minutes to draw out juices.
  4. In a medium bowl, whisk together flour, baking powder, salt, and 2 tablespoons sugar.
  5. Cut cold, cubed butter into the flour mixture using a fork or pastry cutter until it resembles coarse crumbs with pea-sized chunks.
  6. Stir in heavy cream and vanilla extract until the dough just comes together; do not overmix.
  7. Pour the peach mixture into a 9×13 inch baking dish and spread evenly.
  8. Drop spoonfuls of the biscuit dough over the peaches, leaving gaps for bubbling.
  9. Brush the top of the dough with melted butter.
  10. Bake for 45-50 minutes until the topping is golden brown and peaches are bubbling vigorously. Tent with foil if browning too quickly.
  11. Cool for at least 15 minutes before serving to allow juices to thicken.

Notes

Keep butter cold for flaky biscuits. Do not overmix the dough. Let the cobbler cool for 15-20 minutes before serving to prevent runny filling. Can be made with frozen peaches (thaw and drain first).
