- 1 box (15.25 oz) chocolate cake mix (Devil’s Food recommended)
- 1 cup (240ml) hot water
- 1/3 cup (80ml) vegetable oil
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 1 can (12 oz) evaporated milk
- 1 cup (200g) granulated sugar
- 3 large egg yolks
- 1/4 cup (57g) unsalted butter, cubed
- 1 teaspoon vanilla extract
- 1 cup (60g) sweetened shredded coconut
- 1 cup (100g) chopped pecans, toasted
- 1/2 cup chocolate chips (optional)
- Pinch of sea salt (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease two 8-inch round cake pans and line bottoms with parchment paper.
- In a large bowl, combine cake mix, hot water, vegetable oil, eggs, and vanilla. Beat on medium speed for 2 minutes until smooth.
- Pour batter evenly into prepared pans. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Let cakes cool in pans for 10 minutes, then turn out onto a wire rack to cool completely.
- In a medium saucepan, whisk together evaporated milk, sugar, egg yolks, and butter. Cook over medium heat, stirring constantly, for 10-12 minutes until thickened.
- Remove from heat and stir in vanilla, coconut, and toasted pecans.
- Place one cake layer on a serving plate. Spread half the warm frosting over the top. Add second layer and spread remaining frosting over top and sides.
- Refrigerate for at least 1 hour to set the frosting before slicing and serving.
Notes
Toast pecans in a dry skillet for 3-4 minutes before adding to frosting for enhanced flavor. Use hot water to bloom the cocoa powder for richer chocolate taste. Ensure cakes are completely cool before frosting to prevent melting. The cake tastes better after sitting in the fridge for 24 hours.
