Description
A rich, creamy, no-churn pumpkin ice cream with a salty-sweet caramel swirl. This festive holiday dessert requires no ice cream machine and only 10 minutes of active prep time.

- 14 oz (397g) can sweetened condensed milk
- 1 cup (240g) canned pumpkin puree
- 2 teaspoons pumpkin pie spice
- 1 teaspoon vanilla extract
- 2 cups (480ml) heavy whipping cream, cold
- 2 tablespoons confectioners’ sugar (optional)
- ½ cup (120ml) thick caramel sauce
- ½ cup toasted pecans, chopped (optional)
- ¼ cup gingersnap crumbs (optional)
Instructions
- Chill a large mixing bowl in the freezer for 10 minutes if possible. Pour cold heavy cream into the bowl.
- Using a hand mixer or stand mixer, whip the heavy cream on medium-high speed until stiff peaks form. Add confectioners’ sugar if using.
- In a separate medium bowl, whisk together sweetened condensed milk, pumpkin puree, pumpkin pie spice, and vanilla extract until smooth.
- Gently fold the pumpkin mixture into the whipped cream using a spatula. Fold from the bottom up until just combined, being careful not to deflate the cream.
- Pour the mixture into a 9×5 inch loaf pan lined with parchment paper. Smooth the top.
- Drizzle caramel sauce over the top in a zigzag pattern. Use a knife or chopstick to gently swirl the caramel into the cream to create ribbons.
- Cover tightly with plastic wrap or a lid and freeze for at least 6 hours, preferably overnight.
- Before serving, let the ice cream sit on the counter for 5-10 minutes to soften slightly. Scoop and enjoy.
Notes
Ensure heavy cream is very cold for best whipping results. Use thick caramel sauce to maintain distinct ribbons rather than mixing it in. Do not use pumpkin pie filling; use 100% pure pumpkin puree. For dairy-free version, substitute heavy cream with coconut cream and condensed milk with maple syrup.
