Description

A rich, custardy French toast casserole loaded with blueberries that can be assembled the night before for an easy, stress-free breakfast.


Ingredients

  • 1 loaf day-old bread (about 400g), cut into 1-inch cubes
  • 2 tablespoons butter (for greasing dish)
  • 6 large eggs, room temperature
  • 1 cup heavy cream
  • 1 cup whole milk
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups fresh or frozen blueberries
  • Optional Streusel: 1/2 cup flour, 1/4 cup brown sugar, 1/4 cup cold butter, 1/4 cup oats

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13 inch baking dish with butter.
  2. Arrange bread cubes in a single layer in the prepared baking dish.
  3. In a large bowl, whisk together eggs, heavy cream, milk, maple syrup, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  4. Pour the custard evenly over the bread cubes. Gently press down on the bread to ensure it soaks up the liquid. Let sit for 5 minutes, then press down again.
  5. Scatter blueberries evenly over the top. If using streusel, sprinkle it on top now.
  6. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 1 hour, ideally overnight (8-12 hours).
  7. Remove the dish from the fridge and let it sit for 15 minutes while the oven heats up.
  8. Bake for 35-40 minutes, or until the top is golden brown and the center is set but still has a slight jiggle. Tent with foil if the top browns too quickly.
  9. Let the casserole rest for 10 minutes before serving.

Notes

Use day-old or stale bread to prevent the casserole from becoming soggy. If using fresh bread, toast it in the oven for 5 minutes at 350°F to dry it out. For best texture, chill the assembled casserole overnight to allow the bread to fully absorb the custard. If the top browns too quickly, tent with foil during the last 10 minutes of baking.
