A quick, refreshing, and hydrating summer drink combining juicy watermelon, fresh mint, lime juice, and a touch of sweetness. Perfect for busy weeknights or any occasion.
Ingredients
- 4 cups cubed seedless watermelon (about 600g / 21 oz)
- ½ cup packed fresh mint leaves (about 15g / 0.5 oz)
- 2 tablespoons fresh lime juice (about 30ml / 1 fl oz)
- 2 cups cold water (480ml / 16 fl oz)
- 1–2 tablespoons honey or agave syrup (15-30ml / 0.5–1 fl oz), optional
- Ice cubes for serving, optional
- Extra mint sprigs for garnish, optional
Instructions
- Cut watermelon into chunks, removing the rind. Rinse and roughly chop fresh mint leaves.
- Place watermelon chunks, mint leaves, and fresh lime juice into a blender. Pulse a few times to break down the mint, then blend on high until smooth and vibrant pink.
- Optional: Pour the blended mixture through a fine mesh sieve into a pitcher to remove pulp and mint bits, pressing with a spoon to extract juice.
- Stir in cold water to dilute to your liking. Add honey or agave syrup gradually, tasting as you go to adjust sweetness.
- Chill in the refrigerator for 30 minutes to an hour if time allows. Serve over ice with a sprig of fresh mint.
Notes
Use ripe, seedless watermelon for best flavor. Adjust water amount to control intensity. Bruise mint leaves gently before blending for stronger mint flavor. For a fizzy twist, substitute half the water with sparkling water. The drink can be made a day ahead by preparing watermelon puree and adding water, lime, and sweetener before serving.
