  • 68 medium fresh peaches (about 3 lbs / 1.3 kg), sliced
  • ½ cup granulated sugar (100g)
  • 1 tablespoon lemon juice (15ml)
  • 1 teaspoon ground cinnamon (2g)
  • 1 can (16 oz / 450g) refrigerated buttermilk biscuit dough
  • 4 tablespoons butter (55g), melted
  • Vanilla ice cream or whipped cream, for serving (optional)

Instructions

  1. Wash and slice peaches into ½-inch wedges, removing pits. Toss with sugar, lemon juice, and cinnamon in a large bowl. Let sit for 10-15 minutes to draw out juices.
  2. Preheat grill to medium-high heat (375-400°F / 190-200°C). Clean and oil grates. Set up for indirect heat.
  3. Place a 10-inch or 12-inch cast-iron skillet on the grill for 2-3 minutes to pre-heat. Remove carefully and pour in the peach mixture, spreading evenly.
  4. Separate biscuit dough and arrange biscuits on top of the peaches, leaving some gaps for steam. Press gently to adhere.
  5. Move skillet to the indirect heat zone. Close lid and grill for 25-30 minutes until biscuits are golden and peaches are bubbling.
  6. If tops brown too quickly, tent loosely with aluminum foil.
  7. About 5 minutes before finishing, remove lid and brush biscuit tops with melted butter. Replace lid to finish cooking.
  8. Remove from grill and let cool for 10 minutes to allow syrup to thicken. Serve warm with ice cream.

Notes

Use indirect heat to prevent burning. If using canned peaches, drain well and consider adding a splash of water or apple juice if the mixture is too dry. For a gluten-free option, use gluten-free biscuit dough. For dairy-free, use dairy-free butter and biscuit dough. Do not freeze leftovers as biscuits become soggy.
