  • 2 tablespoons (30ml) olive oil
  • 1 tablespoon (15ml) apple cider vinegar
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • Wooden or metal skewers (soak wooden skewers in water for 30 minutes before grilling)

Instructions

  1. Cut chicken into bite-sized, roughly 1.5-inch pieces and place in a large bowl or zip-top bag.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, apple cider vinegar, black pepper, and red pepper flakes if using.
  3. Pour marinade over chicken, seal the bag or cover the bowl, and toss to coat evenly. Refrigerate for at least 20 minutes, ideally 30-60 minutes, up to 4 hours.
  4. Thread chicken pieces onto soaked wooden or metal skewers, leaving space between pieces for even cooking.
  5. Preheat grill to medium-high heat. Oil the grates or brush with olive oil to prevent sticking.
  6. Grill skewers for 5-6 minutes per side, turning once, until chicken is cooked through and caramelized. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
  7. Optional: Brush skewers with leftover marinade during the last 2 minutes of grilling (boil marinade first if using as a dipping sauce).
  8. Remove skewers from grill and let rest for 2 minutes before serving.
