Quick, flavorful grilled chicken skewers with a sticky honey garlic marinade, perfect for busy weeknights and festive occasions.
Ingredients
- 1.5 pounds (680g) chicken breasts or thighs, cut into 1.5-inch pieces
- 1/4 cup (85g) pure honey
- 4 cloves fresh garlic, minced (about 2 tablespoons)
- 1/4 cup (60ml) low-sodium soy sauce
- 2 tablespoons (30ml) olive oil
- 1 tablespoon (15ml) apple cider vinegar
- 1/2 teaspoon freshly ground black pepper
- 1/4 teaspoon red pepper flakes (optional)
- Wooden or metal skewers (soak wooden skewers in water for 30 minutes before grilling)
Instructions
- Cut chicken into bite-sized, roughly 1.5-inch pieces and place in a large bowl or zip-top bag.
- In a small bowl, whisk together honey, minced garlic, soy sauce, olive oil, apple cider vinegar, black pepper, and red pepper flakes if using.
- Pour marinade over chicken, seal the bag or cover the bowl, and toss to coat evenly. Refrigerate for at least 20 minutes, ideally 30-60 minutes, up to 4 hours.
- Thread chicken pieces onto soaked wooden or metal skewers, leaving space between pieces for even cooking.
- Preheat grill to medium-high heat. Oil the grates or brush with olive oil to prevent sticking.
- Grill skewers for 5-6 minutes per side, turning once, until chicken is cooked through and caramelized. Use a meat thermometer to ensure internal temperature reaches 165°F (74°C).
- Optional: Brush skewers with leftover marinade during the last 2 minutes of grilling (boil marinade first if using as a dipping sauce).
- Remove skewers from grill and let rest for 2 minutes before serving.
