  • 2 pounds boneless, skinless chicken thighs, cut into 1-inch cubes
  • 810 wooden or bamboo skewers
  • 1 cup BBQ sauce (sweet and smoky style)
  • 2 tablespoons honey
  • 1 tablespoon soy sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 tablespoon vegetable oil
  • Optional: Bell peppers or red onion chunks for skewering

Instructions

  1. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  2. Pat the chicken cubes dry with a paper towel to help the sauce adhere.
  3. In a medium bowl, whisk together the BBQ sauce, honey, soy sauce, garlic powder, onion powder, black pepper, and vegetable oil until smooth.
  4. Thread the chicken cubes onto the skewers, leaving a little space between pieces. If adding vegetables, alternate them with the chicken.
  5. Preheat your oven broiler to high. Line a baking sheet with foil or use a broiler pan.
  6. Place the skewers on the prepared baking sheet, 4-6 inches from the broiler element.
  7. Brush the tops of the chicken with half of the BBQ glaze.
  8. Broil for 5 minutes.
  9. Flip the skewers and brush with the remaining glaze.
  10. Continue broiling for another 5-7 minutes, or until the chicken is cooked through (165°F) and the sauce is bubbly and caramelized.
  11. Let the skewers rest for 2 minutes before serving.

Notes

Wooden skewers must be soaked in water for at least 30 minutes to prevent burning. Chicken thighs are preferred over breasts for juiciness. Keep an eye on the sauce as sugar burns quickly under the broiler. Leftovers can be stored in the fridge for up to 4 days or frozen for up to 3 months.
