Description

A comforting, one-pot creamy chicken and wild rice soup made in the Instant Pot. It features tender chicken, chewy wild rice, and a rich half-and-half sauce without needing heavy cream or hours of prep time.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 medium yellow onion, diced
  • 2 large carrots, diced
  • 2 stalks celery, diced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup wild rice blend
  • 2 tablespoons butter
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • 1 bay leaf
  • Salt and black pepper to taste
  • ½ cup half-and-half or heavy cream

Instructions

  1. Press the ‘Sauté’ button on the Instant Pot. Add butter and melt. Add diced onion, carrots, and celery; cook for 5 minutes until soft and translucent.
  2. Add minced garlic, dried thyme, and bay leaf. Stir constantly for 1 minute until fragrant, being careful not to burn the garlic.
  3. Add chicken, wild rice blend, and chicken broth. Stir well to scrape up any browned bits from the bottom of the pot.
  4. Lock the lid, set valve to ‘Sealing’, and pressure cook on High for 15 minutes.
  5. Perform a Quick Release to vent steam. Once the pin drops, open the lid and remove the chicken.
  6. Shred the chicken with two forks and return it to the pot. Discard the bay leaf.
  7. Stir in the half-and-half or heavy cream. Press ‘Sauté’ again and simmer for 3-5 minutes until the soup thickens.
  8. Taste and adjust seasoning with salt and pepper. Serve hot with crusty bread or desired toppings.

Notes

Ensure you scrape the bottom of the pot thoroughly after sautéing to prevent the ‘Burn’ error. Add dairy only after pressure cooking to prevent curdling. Wild rice takes longer to cook than white rice, so do not reduce the pressure cook time below 12 minutes unless using white rice. This soup freezes well but may thicken upon reheating; add a splash of broth to loosen.
