  • 2 tablespoons (30ml) extra virgin olive oil
  • 2 teaspoons fresh thyme leaves, stripped from stems
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • Optional: 2 cloves garlic, minced
  • Optional: 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Peel carrots and cut into sticks about 3-4 inches long and ½-inch thick, keeping them uniform in size.
  3. In a large mixing bowl, toss the carrots with honey, olive oil, fresh thyme leaves, salt, and black pepper until well coated.
  4. Line a baking sheet with parchment paper or a silicone baking mat if desired.
  5. Spread the carrots out in a single layer on the baking sheet, ensuring they have space to caramelize.
  6. Roast in the preheated oven for 25-30 minutes. After 15 minutes, flip the carrots using tongs or a spatula for even browning.
  7. If using garlic, add minced garlic during the last 5 minutes of roasting to avoid burning.
  8. Remove from oven when carrots are fork-tender and caramelized around the edges.
  9. Optional: Sprinkle fresh parsley on top before serving.
  10. Serve warm.

Cut carrots evenly for uniform roasting. Flip carrots halfway through cooking to ensure even caramelization. Use fresh thyme for best flavor; if using dried thyme, reduce to 1 teaspoon and add earlier in roasting.
