  • 3 tablespoons (60 ml) honey, raw or wildflower
  • 2 tablespoons (30 ml) low-sodium soy sauce or tamari for gluten-free
  • 4 cloves garlic, minced (about 1 tablespoon)
  • 1 tablespoon (15 ml) rice vinegar
  • 2 tablespoons (30 ml) olive oil, extra virgin for glaze if desired
  • Freshly ground black pepper, to taste
  • About 4 cups (600 g) mixed vegetables for roasting (e.g., broccoli florets, snap peas, sliced bell peppers)
  • Optional garnish: sesame seeds and thinly sliced green onions

Instructions

  1. Preheat oven to 400°F (205°C). Line a rimmed baking sheet with parchment paper or a silicone baking mat.
  2. Rinse salmon fillets and pat dry with paper towels. Mince garlic and chop vegetables into bite-sized pieces.
  3. In a small bowl, whisk together honey, soy sauce, rice vinegar, olive oil, and minced garlic to make the glaze. Set aside.
  4. Place vegetables on one side of the sheet pan. Drizzle with olive oil, sprinkle with salt and freshly ground black pepper, and toss to coat evenly. Spread in a single layer.
  5. Arrange salmon fillets skin-side down on the empty side of the pan. Brush the tops generously with the honey garlic glaze, reserving some glaze for basting.
  6. Roast in the oven for about 12 minutes. Halfway through (6-7 minutes), remove the pan and brush salmon with more glaze. Return to oven and continue roasting until salmon is opaque and flakes easily with a fork.
  7. Remove from oven and sprinkle with sesame seeds and sliced green onions if using. Serve immediately with steamed rice or your favorite grain.

Notes

Pat salmon dry before glazing to ensure crispy skin and prevent sticking. Use fresh garlic for best flavor. Do not overcrowd the pan to allow even roasting. Baste salmon halfway through cooking for a sticky, caramelized glaze. Leftover glaze can be saved for rice or stir-fries. For gluten-free, substitute soy sauce with tamari. For a spicy variation, add red pepper flakes or sriracha to the glaze.
