  • 1 tablespoon sugar
  • 3 ½ cups bread flour

  • 2 tablespoons vegetable oil
  • 34 tablespoons everything bagel seasoning
  • 1 egg beaten with 1 tablespoon water (for egg wash)
  • 1 tablespoon baking soda (for boiling water)

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5 minutes until foamy.
  2. Add bread flour, whole wheat flour, salt, and oil. Mix until a shaggy dough forms.
  3. Knead the dough using a stand mixer with a dough hook for 5 minutes, or by hand for 8-10 minutes, until smooth and elastic.
  4. Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour or until doubled in size.
  5. Punch down the dough and divide into 8 equal pieces. Roll each into a ball, poke a hole in the center, and stretch to 1.5 inches.
  6. Place shaped bagels on a parchment-lined baking sheet, cover loosely, and let rise again for 30 minutes.
  7. Bring a large pot of water to a boil, then reduce to a gentle simmer. Add 1 tablespoon baking soda.
  8. Boil bagels for 30 seconds per side (2-3 at a time). Remove with a slotted spoon and place back on the baking sheet.
  9. Preheat oven to 425°F (220°C). Brush boiled bagels with egg wash and sprinkle generously with everything bagel seasoning.
  10. Bake for 20-25 minutes, rotating halfway, until deep golden brown and hollow when tapped.
  11. Cool on a wire rack for at least 10 minutes before slicing.
