  • 0.5 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 0.25 cup onion, diced
  • 0.5 teaspoon dried oregano
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Prep ingredients: Dice turkey, mince garlic, and measure spinach. If using frozen spinach, thaw and squeeze out all excess water.
  2. Whisk egg whites in a bowl with a pinch of salt and pepper until frothy.
  3. Heat olive oil in a 10-inch non-stick skillet over medium heat. Sauté onion for 1-2 minutes until softened.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add spinach and turkey to the skillet; stir for 1 minute until spinach wilts and turkey heats through.
  6. Reduce heat to medium-low. Pour whisked egg whites over the mixture and spread evenly. Sprinkle feta cheese on top.
  7. Do not stir. Let eggs sit for 1-2 minutes until edges start to set.
  8. Cover skillet with a lid and cook for 3-4 minutes until the center is mostly set but slightly jiggly.
  9. Serve immediately, or let cool slightly before slicing into wedges.

Notes

Ensure frozen spinach is thoroughly squeezed dry to prevent a watery frittata. Cook on medium-low heat to keep egg whites tender and fluffy. This recipe stores well in the fridge for up to 4 days but does not freeze well.
