- 4 large eggs
- 1 package (12 oz) turkey sausage (mild or Italian)
- 1 medium bell pepper, diced
- 1/2 medium onion, diced
- 1/2 cup shredded cheddar cheese
- 1 tablespoon butter or oil
- 1/2 teaspoon salt
- Black pepper to taste
- Optional: Handful of spinach or diced tomatoes
Instructions
- Dice the bell pepper and onion. Crack eggs into a bowl and whisk with salt and pepper. Grate cheese if not pre-shredded.
- Heat a 10-12 inch skillet over medium heat. Add butter or oil. Once shimmering, add turkey sausage and crumble into small pieces.
- Cook sausage for 4-5 minutes until browned and cooked through. Drain excess grease if necessary.
- Add diced peppers and onions to the pan with the sausage. Cook for 2 minutes until softened. Add spinach now if using.
- Pour whisked eggs over the sausage and veggies. Let sit for 10 seconds, then gently push eggs to form soft curds.
- Cook until eggs are just set but still slightly glossy. Remove pan from heat.
- Sprinkle shredded cheese over the top. Let sit for 30 seconds to melt.
- Divide into bowls and serve immediately.
Notes
Do not overcook the eggs; they will continue to cook from residual heat. Crumble sausage into bite-sized pieces for even distribution. Season eggs before cooking for better flavor. If reheating leftovers, add a splash of water or milk to prevent drying out. This recipe does not freeze well due to the eggs.
