Description
A creamy, high-protein chicken salad made with cottage cheese instead of mayo. It’s naturally gluten-free, takes only 15 minutes to prepare, and is perfect for busy weeknights or meal prep.

- 3 cups shredded rotisserie chicken (about 450g)
- 1 cup cottage cheese (small-curd, full-fat or low-fat)
- ½ cup plain non-fat Greek yogurt
- 3 tablespoons fresh dill, chopped
- 2 stalks green onions, thinly sliced
- 2 stalks celery, finely diced
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 small shallot, minced
- 1 teaspoon Dijon mustard
- ½ teaspoon sea salt (or to taste)
- ½ teaspoon freshly cracked black pepper
- Optional: ¼ cup dried cranberries
- Optional: ¼ cup chopped walnuts
Instructions
- Shred the rotisserie chicken, removing skin and bones. Place in a large mixing bowl.
- In a small bowl or food processor, combine cottage cheese, Greek yogurt, minced garlic, minced shallot, Dijon mustard, lemon juice, salt, and pepper.
- Blend the mixture until smooth for a creamy texture, or whisk with a fork for a chunkier texture.
- Pour the creamy base over the shredded chicken.
- Add the finely diced celery, thinly sliced green onions, and chopped fresh dill.
- Gently toss everything together until the chicken is evenly coated. Taste and adjust seasoning if needed.
- Cover and refrigerate for at least 30 minutes to allow flavors to meld.
- Stir well before serving.
Notes
If you dislike cottage cheese curds, blend the cottage cheese and yogurt until smooth. Let the salad chill for at least 30 minutes for best flavor. Store in the refrigerator for up to 4 days. This recipe does not freeze well. If the sauce is too thick, add a splash of milk or lemon juice.
