- 1 pound ground turkey (93% lean)
- 2 medium sweet potatoes, diced into ½-inch cubes (about 600g)
- 1 medium yellow onion, diced (about 200g)
- 4 cloves garlic, minced
- 1 teaspoon ground cumin
- ½ teaspoon ground cinnamon
- 1 teaspoon smoked paprika
- 1 tablespoon pure maple syrup
- ½ cup low-sodium chicken or vegetable broth
- 2 tablespoons heavy cream or coconut cream (optional)
- 2 tablespoons fresh parsley or cilantro, chopped
- Salt and black pepper to taste
- Cooking oil (if needed)
Instructions
- Dice sweet potatoes into ½-inch cubes, dice the onion, and mince the garlic. Measure spices in a small bowl.
- Heat a large skillet over medium-high heat. Add ground turkey and cook for 5-7 minutes, breaking it up with a spoon, until no longer pink. Drain excess fat if necessary, then remove turkey and set aside.
- In the same skillet, add a little oil if needed. Add diced onions and cook for 2-3 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
- Add diced sweet potatoes to the skillet. Stir in cumin, cinnamon, and smoked paprika. Cook for 5 minutes to toast the spices.
- Pour in chicken broth, cover the skillet, and simmer for 7-8 minutes until potatoes are tender. Stir halfway through.
- Return the cooked turkey to the skillet. Stir in maple syrup and heavy cream (if using). Simmer uncovered for 2 minutes to thicken the sauce.
- Taste and adjust salt and pepper. Stir in fresh parsley or cilantro. Serve immediately.
Notes
Cut potatoes uniformly to ensure even cooking. Do not crowd the pan to allow the turkey to brown properly. Use fresh spices for best flavor. This dish does not freeze well due to the texture of sweet potatoes; store in the refrigerator for up to 4 days. Reheat with a splash of broth to maintain moisture.
