- 1.5 lbs (680g) frozen shrimp, peeled and deveined
- 2 tablespoons neutral oil (vegetable or canola)
- Salt and black pepper to taste
- 4 tablespoons (55g) unsalted butter
- 3 cloves garlic, minced
- 3 tablespoons (45ml) fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Thaw frozen shrimp in a colander under cold water for 10-15 minutes. Pat them completely dry with paper towels to ensure proper grilling.
- If using bamboo skewers, soak them in water for 30 minutes. Thread 3-4 shrimp onto each skewer.
- In a small skillet over medium-low heat, melt the butter. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn it.
- Remove the skillet from heat and stir in the lemon juice, lemon zest, chopped parsley, and red pepper flakes. Set the sauce aside.
- Preheat your grill to medium-high heat and lightly oil the grates.
- Brush the shrimp with neutral oil and season with salt and pepper.
- Grill the shrimp for 2-3 minutes per side until they turn opaque and pink with slight char marks. Do not overcook.
- Transfer the grilled shrimp to a platter and drizzle with the warm lemon herb sauce. Serve immediately.
Notes
Patting the shrimp dry is crucial to prevent steaming and ensure a good sear. Shrimp cook very quickly; remove them from heat as soon as they are opaque and pink to avoid a rubbery texture. The sauce can be made ahead and stored in the fridge for up to 2 days. For a dairy-free version, substitute butter with olive oil or coconut oil.
