A bright, tangy, and refreshing 3-ingredient green smoothie that highlights fresh flavors without masking vegetables with bananas or yogurt. It’s light, anti-inflammatory, and ready in just 3 minutes.

- 2 cups fresh kale leaves (packed, stems removed)
- 1 medium green apple (cored and chopped, skin on)
- 1-inch piece fresh ginger (peeled and chopped)
- 1 cup water or coconut water
- 1–2 pitted Medjool dates (optional, for sweetness)
- 1 teaspoon lemon juice (optional)
- 1/2 cup ice
Instructions
- Wash the kale thoroughly, soak in cold water to remove dirt, then rinse and spin dry. Remove thick stems and tear leaves into smaller pieces.
- Core and chop the apple into quarters. Peel the ginger using a spoon and chop into small chunks. Pit the dates if using.
- Add the liquid (water or coconut water) to the blender first to help the blades spin freely.
- Add the kale leaves, apple chunks, ginger, dates (if using), lemon juice, and ice.
- Blend on low speed, gradually increasing to high. Blend for 45-60 seconds until completely smooth with no visible bits.
- Taste and adjust: add more apple/date for sweetness, more liquid if too thick, or more ginger for spice.
- Pour into a glass and serve immediately.
Notes
Remove kale stems as they are fibrous and tough. Use frozen apple chunks instead of ice for a thicker texture. The smoothie is best consumed fresh but can be stored in an airtight container in the fridge for up to 24 hours. Shake well before drinking if stored.
