  • 1/2 cup unsalted butter, cut into cubes
  • 4 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1 teaspoon espresso powder (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease the bottom of an 8-inch springform pan and line with parchment paper. Do not grease the sides. Place pan on a baking sheet.
  2. Chop chocolate into chunks if using bars. Add chocolate and butter to a medium saucepan over low heat. Stir constantly until melted and smooth (3-5 minutes). Do not boil. Remove from heat and let cool for 5 minutes.
  3. In a large mixing bowl, add eggs and sugar. Beat on medium-high speed with a hand or stand mixer for 5-7 minutes until mixture triples in volume, becomes pale yellow, and forms ribbons.
  4. Pour warm chocolate mixture into whipped eggs. Add vanilla, cocoa powder, espresso powder (if using), and salt. Gently fold with a silicone spatula until just incorporated. Do not over-mix.
  5. Pour batter into prepared pan and smooth top. Bake for 35-40 minutes. Edges should be set and pulling away from pan, but center should still jiggle slightly.
  6. Remove from oven and let cool in pan for 15 minutes. Run a knife around edge and release springform ring. Cool completely on a wire rack (about 2 hours), then refrigerate for at least 1 hour before slicing.
  7. Slice into wedges and serve with whipped cream, fresh berries, or powdered sugar.

Notes

Use high-quality chocolate with at least 60% cacao. Room temperature eggs whip better for a lighter texture. Do not overbake; the center should jiggle slightly as it sets while cooling. For cleaner slices, chill the torte completely before serving.
