Instructions

  1. Rinse the baby potatoes and pat dry. Halve any larger than a golf ball for even cooking. Finely chop rosemary and thyme, and mince garlic.
  2. In a large mixing bowl, combine potatoes, olive oil, garlic, rosemary, thyme, salt, and pepper. Toss well to coat evenly. Add lemon zest if using and toss again.
  3. Spread the potatoes in a single layer on a rimmed baking sheet, ensuring they are not crowded or overlapping.
  4. Roast in a preheated oven at 425°F (220°C) for 35-40 minutes, stirring or flipping halfway through for even browning. Potatoes are done when tender inside and crispy golden on the edges.
  5. Taste and adjust seasoning with salt or pepper if needed. Serve immediately, optionally garnished with fresh parsley or an extra drizzle of olive oil.

Dry potatoes thoroughly before roasting to avoid steaming. Roast at high heat (425°F) for crispy edges. Flip potatoes halfway through cooking for even browning.
