  • 1 to 1.5 pounds Beef Sirloin or Ribeye, cut into 1-inch cubes
  • 1 tablespoon High-Smoke Point Oil (avocado or canola)
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper, freshly cracked
  • 3 tablespoons Unsalted Butter
  • 45 cloves Garlic, minced
  • 23 sprigs Fresh Thyme or Rosemary
  • ¼ teaspoon Red Pepper Flakes
  • 1 tablespoon Parsley, chopped

Instructions

  1. Pat the steak cubes very dry with paper towels to ensure a good sear.
  2. Season the dried steak cubes generously with salt and pepper.
  3. Heat a cast iron or stainless steel skillet over medium-high heat and add the oil until it shimmers and just starts to smoke.
  4. Add steak cubes to the pan in a single layer, ensuring not to overcrowd the pan (cook in batches if necessary).
  5. Sear the steak undisturbed for 2 minutes to develop a brown crust, then flip and cook for another 2 minutes on the other side for medium-rare.
  6. Reduce heat to medium and add butter to the pan, letting it melt and foam.
  7. Add minced garlic and red pepper flakes, stirring constantly for 30-60 seconds until fragrant but not burnt.
  8. Return the cooked steak bites to the pan and toss to coat in the garlic butter.
  9. Add fresh herbs (thyme/rosemary) and toss for another 30 seconds.
  10. Remove from heat, taste and adjust salt if needed, sprinkle with parsley, and serve immediately.

Notes

Patting the steak dry is critical for a good sear; wet meat will steam. Do not overcrowd the pan, or the temperature will drop and the meat will steam instead of sear. Garlic burns easily, so add it only after the steak is mostly cooked and the heat is reduced. Steak bites are best served immediately as they do not require resting and cool down quickly.
