A crowd-pleasing, creamy buffalo chicken dip baked to bubbly perfection, served with homemade crispy tortilla chips. Perfect for game day or any party.
Ingredients
- 3 cups cooked shredded chicken (about 400g / 14 oz)
- 8 oz cream cheese, softened (225g)
- 1/2 cup buffalo wing sauce (120ml)
- 1/2 cup ranch dressing (120ml)
- 1 cup shredded cheddar cheese (115g)
- 1 cup shredded mozzarella cheese (115g)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- Black pepper to taste
- Fresh cilantro or green onions (optional, for garnish)
- 8–10 white corn tortillas, cut into wedges
- 2 tablespoons olive oil or avocado oil
- Salt to taste (for chips)
Instructions
- Preheat oven to 375°F (190°C).
- Shred cooked chicken if not pre-shredded. Cut tortillas into wedges (about 8 wedges per tortilla). Set aside.
- Toss tortilla wedges with olive oil and a pinch of salt on a baking sheet. Spread in a single layer without overlapping.
- Bake tortilla chips for 12-15 minutes, flipping halfway through, until golden and crisp. Watch closely after 10 minutes to avoid burning. Set aside.
- In a mixing bowl, combine softened cream cheese, buffalo sauce, ranch dressing, garlic powder, onion powder, salt, and black pepper. Mix until smooth.
- Stir in shredded chicken, cheddar cheese, and mozzarella cheese until evenly coated.
- Transfer mixture to an 8×8-inch baking dish and spread evenly.
- Bake dip at 375°F (190°C) for 20-25 minutes until bubbly and golden on top.
- Remove from oven and garnish with chopped cilantro or green onions if desired.
- Serve immediately with warm crispy tortilla chips.
Notes
Use rotisserie chicken for convenience and flavor. Soften cream cheese fully before mixing to avoid lumps. Adjust buffalo sauce amount to control heat level. Bake chips fresh for best crunch. Dip can be assembled a day ahead (except cheese) and refrigerated. Reheat leftovers gently with a splash of water or milk to maintain creaminess. Avoid freezing to preserve texture.
