A no-cook, assembly-only charcuterie board designed for game day, featuring sharp cheddar, smoked gouda, meats, fruits, and crunchy snacks that survive the elements and feed a crowd on a budget.

- 6 oz Smoked Gouda (sliced or in chunks)
- 1 small wheel Brie or Camembert (whole, rind on)
- 1 bag Pretzel Crisps or Pretzel Rods (salted)
- 1 box Water Crackers
- 1 loaf Baguette (sliced into 1-inch rounds, lightly toasted)
- 1 pack Pepperoni or Salami Sticks
- 4–6 Smoked Sausage Links (pre-cooked, sliced into coins)
- 2 cups Grapes (red or green, on the vine)
- 2 medium Apples (Honeycrisp or Fuji, sliced, tossed with lemon juice)
- 1 cup Dried Apricots or Figs
- 1 jar Pickles (sliced dill pickles)
- 1 cup Olives (mixed Kalamata and green)
- 1 bag Dark Chocolate Covered Pretzels
- Caramel Apple Dip or store-bought caramel sauce
Instructions
- Prep ingredients: Cut cheddar into cubes, slice smoked sausage into coins, wash grapes and apples, and open packages of pretzels and crackers. Let Brie come to room temperature.
- Place anchor items: Position the wheel of Brie in the center or slightly off-center. Place bowls of pickles and olives in different corners to create zones.
- Add cheeses and meats: Scatter cheddar and smoked gouda cubes around the board. Place salami or pepperoni sticks in bundles or fanned out. Pile smoked sausage coins near pretzel rods to create visual mounds.
- Fill in the crunch: Tuck water crackers and pretzel crisps into empty spaces. Stand pretzel rods in a cup or lay flat. Fan baguette slices out like a sunburst for height.
- Add fresh and sweet: Scatter grapes and apple slices throughout the board. Place dried apricots or figs in small clusters to add color and break up savory tones.
- Add final touches: Place chocolate-covered pretzels and nuts in gaps. Ensure the board is not too crowded. Serve immediately or keep in a cooler until ready to eat.
Notes
Keep the board cool by placing it in a cooler with block ice until serving. Use block ice as it melts slower than cubed ice. Bring plenty of napkins as charcuterie can be messy. Cheese tastes best at room temperature, so remove from fridge 30 minutes before serving. Do not freeze the assembled board as fruit and crackers will get mushy.
