  • 10 oz fresh spinach or 1 package frozen spinach, thawed and drained
  • 1 can (14 oz) artichoke hearts, drained and chopped
  • 8 oz cream cheese, softened
  • ½ cup (120 ml) sour cream
  • ½ cup (120 ml) mayonnaise
  • ½ cup (50 g) freshly grated Parmesan cheese
  • 1 cup (100 g) shredded mozzarella cheese
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste (start with ½ teaspoon salt)
  • ¼ teaspoon red pepper flakes (optional)
  • 1 large sourdough bread boule (about 1 lb / 450 g)

Instructions

  1. Preheat oven to 375°F (190°C). Wash and roughly chop fresh spinach or thaw and squeeze out moisture from frozen spinach. Drain and chop artichoke hearts. Mince garlic and grate Parmesan and mozzarella cheeses. Set aside.
  2. Using a serrated knife, cut a circle about 2 inches from the top of the sourdough boule. Remove the lid and hollow out the inside, leaving about a 1-inch thick wall. Save the bread chunks for dipping or toasting.
  3. In a large mixing bowl, combine cream cheese, sour cream, and mayonnaise until smooth. Stir in Parmesan, mozzarella, garlic, lemon juice, salt, pepper, and red pepper flakes if using. Fold in spinach and artichokes. Taste and adjust seasoning.
  4. Spoon the dip into the hollowed bread bowl, packing it evenly and mounding slightly on top. Place the bread lid on the side or save for dipping. Set the bowl on a baking sheet and bake for 25-30 minutes until bubbly and golden brown.
  5. Let the bread bowl rest for 5 minutes before serving. Serve warm with crusty bread pieces, crackers, or veggies for dipping.
