Description
A quick, budget-friendly breakfast sandwich featuring impossibly fluffy eggs, crispy thick-cut bacon, and melted cheese on toasted English muffins or bagels.

- 2 large English muffins or bagels, sliced
- 1 tablespoon butter (for toasting)
- 3 large eggs
- 1 tablespoon milk or water
- Salt and black pepper to taste
- 4–6 strips thick-cut bacon
- 2 slices American cheese or ½ cup shredded cheddar/Swiss cheese
- Optional: 1 cup fresh spinach
- Optional: Hot sauce
Instructions
- Cook bacon in a cold skillet over medium heat for 2-3 minutes per side until golden and crisp. Remove to a paper towel-lined plate, leaving about a teaspoon of fat in the pan.
- Toast the English muffins or bagels until golden and firm using a toaster or toaster oven.
- Whisk eggs vigorously with milk (or water), salt, and pepper until bubbles form on top.
- Reduce heat under the bacon pan to medium-low. Pour in egg mixture and gently push edges toward center with a spatula to create curds. Cook for 2-3 minutes until mostly set but still slightly wet.
- Place cheese on the bottom half of the toasted bread. Pile hot eggs on top to help melt the cheese. Add bacon and optional spinach. Top with the other half of the bread and press gently.
- Serve immediately.
Notes
Start bacon in a cold pan to render fat slowly for even crispiness. Toast bread well to prevent sogginess. Place cheese on the bottom bun so steam from the eggs melts it perfectly. Cook eggs on medium-low heat to keep them fluffy and tender.
