Description
A rich, silky custard dessert with a golden caramel layer, designed as a mindful ritual to slow down and relax. This make-ahead treat offers a perfect balance of sweet caramel and smooth dairy.

- 1 cup (200g) granulated sugar
- 1/4 cup (60ml) water
- 2 tablespoons (30g) unsalted butter
- 2 cups (480ml) whole milk
- 1 cup (240ml) heavy cream
- 6 large egg yolks
- 1/2 cup (100g) granulated sugar
- 2 teaspoons vanilla extract
- 1/4 teaspoon salt
Instructions
- Preheat oven to 325°F (160°C).
- In a small saucepan, combine 1 cup sugar and water. Stir once to moisten, then stop stirring. Cook over medium heat until the sugar turns a light golden amber color (about 5-7 minutes).
- Remove from heat and immediately stir in butter (it will bubble). Pour caramel into a 9-inch round or springform pan, tilting to coat the bottom evenly. Let harden.
- In a medium saucepan, heat milk and heavy cream over medium-low heat until just steaming (do not boil). Remove from heat.
- In a medium bowl, whisk egg yolks and 1/2 cup sugar until pale and sugar is mostly dissolved. Add vanilla and salt.
- Slowly pour the warm milk mixture into the egg mixture while whisking constantly.
- Strain the custard mixture through a fine-mesh strainer into the caramel-coated pan.
- Place the cake pan inside a large roasting pan. Pour boiling water into the roasting pan until it reaches halfway up the sides of the cake pan.
- Bake for 50-60 minutes until edges are set but the center still jiggles slightly like jelly.
- Remove from water bath and let cool on a wire rack for 30 minutes.
- Cover and refrigerate for at least 4 hours, preferably overnight, before serving.
Notes
The flan tastes best when served slightly cool, not ice cold. Take it out of the fridge 15 minutes before serving. It can be stored in an airtight container in the fridge for up to 5 days. Do not freeze as the texture may become grainy. If the caramel sticks when unmolding, microwave the pan for 10 seconds.
