Description

A spicy, immune-boosting tonic made with apple cider vinegar, horseradish, ginger, and honey. This kid-friendly recipe is simple to make, teaches cooking skills, and serves as a great family wellness ritual.

  • 2 cups (480ml) raw, unfiltered apple cider vinegar
  • ½ cup (120ml) organic honey
  • 1 cup (100g) fresh horseradish root, grated
  • 1 cup (100g) fresh ginger root, grated
  • ½ cup (50g) fresh turmeric root, grated
  • 12 teaspoons cayenne pepper
  • 1 head garlic cloves, peeled (about 1012 cloves)
  • 1 medium onion, chopped (about 150g)
  • 1 cup (240ml) apple cider (optional)
  • 1 large apple, sliced (optional)
  • 1 sprig fresh thyme or rosemary (optional)

Instructions

  1. Wash all roots and vegetables. Peel garlic cloves, chop onion into rough chunks, slice apple (if using), and grate ginger, turmeric, and horseradish.
  2. Layer the chopped vegetables and grated roots into a large glass jar, alternating between strong flavors (garlic, onion, horseradish) and milder ones (apple, ginger). Pack tightly but leave an inch of space at the top.
  3. Pour apple cider vinegar over the ingredients to cover them by at least an inch. Stir in honey until dissolved, then add cayenne pepper and stir well.
  4. Seal the jar tightly and store in a cool, dark place for 2-4 weeks, shaking every few days to infuse flavors.
  5. Strain the liquid through a coffee filter or fine mesh strainer into a clean bowl, squeezing solids to extract liquid. Discard solids.
  6. Bottle the tonic in clean glass bottles. Serve as a 1-2 tablespoon shot daily or mix into warm water with lemon.

Notes

Wear gloves when handling horseradish and cayenne to avoid skin irritation. Use fresh roots for maximum potency. Store in the fridge for up to 6 months. Shake before pouring if sediment settles.
