  • 1 teaspoon apple cider vinegar (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a large half-sheet pan (18×13 inches) with parchment paper or aluminum foil.
  2. Chop root vegetables into 1-inch chunks to ensure even cooking.
  3. In a large mixing bowl, whisk together maple syrup, Dijon mustard, olive oil, minced garlic, dried thyme, salt, pepper, and apple cider vinegar until smooth.
  4. Add chopped vegetables to the bowl and toss to coat evenly in the glaze.
  5. Add chicken thighs to the bowl and toss again to ensure they are well coated.

Do not crowd the pan; use two pans if necessary to ensure vegetables roast rather than steam. Use real maple syrup, not pancake syrup. Boneless, skin-on thighs are recommended for crispy skin and juiciness. If using chicken breasts, reduce cooking time by 5-10 minutes to prevent drying out.
