Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cube the gluten-free bread into 1-inch pieces. If fresh, toast on a baking sheet for 5-7 minutes until dry and firm. If stale, skip toasting.
  3. In a large mixing bowl, whisk together heavy cream, whole milk, eggs, brown sugar, pumpkin puree, pumpkin pie spice, salt, and vanilla (if using) until smooth.
  4. Place cubed bread in a 9×13 inch baking dish. Pour the custard mixture evenly over the bread.
  5. Press down gently on the bread to ensure all pieces are submerged. Let sit for 10-15 minutes to allow the bread to soak up the liquid.
  6. While the bread rests, make the caramel sauce: In a small saucepan over medium heat, melt butter. Add brown sugar and stir constantly for 2-3 minutes until bubbling.
  7. Slowly pour in warm heavy cream, stirring until smooth. Remove from heat and stir in bourbon and a pinch of salt.
