Ingredients

  • 6 medium bagels, torn into chunks (about 600g)
  • 3 tablespoons everything bagel seasoning
  • 6 large eggs
  • 1.5 cups milk
  • 2 tablespoons butter
  • 1.5 cups sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 2 stalks scallions, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Tear bagels into bite-sized chunks and place them in an 8×8 inch baking dish. If bagels are fresh, dry them in an off oven for 10 minutes.
  2. Spread cream cheese chunks over the bread and sprinkle shredded cheddar cheese evenly over the top.
  3. In a large bowl, whisk eggs until smooth. Add milk, salt, and pepper, then whisk again.
  4. Pour the egg mixture over the bread and cheese. Press down gently to ensure all bread is submerged. Let sit for at least 15 minutes (or overnight in the fridge).
  5. Preheat oven to 350°F (175°C). If made ahead, let the dish sit on the counter for 20 minutes while the oven heats.
  6. Sprinkle everything bagel seasoning generously over the top and dot with butter.
  7. Bake for 35-40 minutes until the top is golden brown and the center is set.
  8. Let cool for 5 minutes before cutting and serving warm.

Notes

Stale bread absorbs custard better than fresh bread. For best results, let the strata soak for at least 15 minutes or overnight. Use sharp cheddar for better flavor. Can be frozen and reheated.
