  • 68 cloves garlic, minced (about 3 tablespoons)
  • ½ cup honey
  • ¼ cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon fresh ginger, grated
  • ½ teaspoon red pepper flakes
  • 1 tablespoon cornstarch mixed with 1 tablespoon water
  • 23 green onions, sliced (for garnish)
  • 1 teaspoon sesame seeds (for garnish)

Instructions

  1. Trim any silver skin from the pork tenderloins, rinse, and pat dry. Place them in the slow cooker.
  2. In a small bowl, whisk together minced garlic, honey, soy sauce, rice vinegar, grated ginger, and red pepper flakes until combined.
  3. Pour the sauce over the pork in the slow cooker, brushing to coat the meat evenly.
  4. Cover and cook on LOW for 4-5 hours until the pork reaches an internal temperature of 145°F and is fork-tender.
  5. Remove the pork to a cutting board and cover loosely with foil to rest.
  6. Turn the slow cooker to HIGH. Stir the cornstarch slurry and pour it into the hot sauce. Stir continuously for 1-2 minutes until the sauce thickens and becomes glossy.
  7. Slice the pork into ½-inch medallions and arrange on a serving platter.
  8. Spoon the thickened sauce over the pork and garnish with green onions and sesame seeds. Serve immediately.

Notes

Do not overcook the pork as it is lean and can become dry. Ensure you trim the silver skin for better texture. The sauce can be adjusted for sweetness by varying the amount of honey. For a spicy kick, add Sriracha. This recipe freezes well for meal prep.
