- 1 cup (150g) Fresh or Frozen Raspberries
- 1 tablespoon Heavy Cream (optional, if mixture is too dry)
- Sea Salt Flakes (optional, for topping)
- Unsweetened Cocoa Powder (optional, for rolling)
Instructions
- Prep the berries: If using frozen raspberries, keep them semi-frozen. If using fresh, pat them completely dry. Finely chop or pulse the raspberries in a food processor until minced (not pureed).
- Melt the chocolate: Place dark chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring vigorously after each interval, until smooth and glossy. Avoid overheating.
- Combine and mix: Add the chopped raspberries to the melted chocolate. Stir gently but thoroughly until every bit of raspberry is coated. If the mixture is too dry, add heavy cream one teaspoon at a time. If too wet, add more chocolate chips.
- Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 1 hour, or up to 2 hours, until the mixture is firm and scoopable.
- Scoop and roll: Use a cookie scoop or teaspoon to portion out small balls (about 1 tablespoon each). Roll each ball between your palms to smooth. If hands get warm, dip them in cold water briefly.
- Coat (optional): Roll the truffles in unsweetened cocoa powder until evenly coated. Shake off excess.
- Set and serve: Place truffles on a parchment-lined baking sheet and refrigerate for another 15 minutes to set completely. Serve in paper cups or store in an airtight container.
Notes
Ensure raspberries are dry to prevent sticky truffles. Do not overheat chocolate to avoid seizing. Keep hands cool while rolling to maintain shape. Store in fridge for up to 2 weeks or freezer for 3 months.
